Carbon steel knife set

This carbon steel set includes a gyuto, a petty, and a paring knife. These knives are made from Swedish steel ss2140, also known as Arne. Arne is a steel that holds its edge well, gets very sharp, and is easy to resharpen. The hardness of this steel is approximately 60-62 HRC. The handles are made from padauk, one of my favorite wood types.

Always remember to hand wash and thoroughly dry the knives after each use, as they are carbon steel and not stainless.

Gyuto: blade length 220 mm, total length 380 mm, height from spine to heel 52 mm.

Petty: blade length 135 mm, total length 280 mm, height from spine to heel 40 mm.

Paring knife: blade length 100 mm, total length 220 mm, height from spine to heel 20 mm.

Sizes may vary as all knives are hand-forged.
